With Peppered, Parmesan Garlic Bread this Recipe – Baked Pumpkin Soup will warm you and give you a good dose of nutrition .
Hopefully you’re able to use one of your pumpkins you’ve grown to make this lovely baked pumpkin soup.
If you have a large pot then double the recipe and freeze some portions for those cold nights when you don’t feel like cooking.

Serves 6 – 8.
Ingredients.
– 3 kg of Pumpkin
– 2-4 Garlic Cloves finely diced
– 1 large Potato 1cm cubes
– 1 large Onion finely diced
– 1 litre of Chicken/Vegetable Stock
– 1 cup of Water
– 1/4 cup of Olive/Vegetable Oil
– Salt & Pepper
– 1/3 cup of finely chopped Parsley Cream (optional)
Method.
1. Chop the pumpkin into pieces and then remove the skin. Place onto a baking tray and coat with Olive Oil or Vegetable Oil.
Bake in 180°C oven for around 50 min or until tender and starting to caramelize.
2. In a large saucepan fry the onion and garlic in a little oil until soft and then add the potato, stock, water and S & P to taste.
Boil until potato is cooked then add Pumpkin and Parsley and boil for 20 min.
3. Remove from stove and cool until it’s suitable to blend with the stick blender. Blend until smooth. When serving you could
add the cream in a swirl pattern and dress with finely chopped parsley. Soup can be frozen as long as the cream has not
been added.

(Sliced French Stick or Turkish Bread work well or even left over bread rolls sliced on the diagonal. If you’re in a hurry readymade garlic bread is a great
option and you can just add the parmesan cheese before heating.)
Ingredients.
1. Your choice of bread.
2. 2 cloves of fresh garlic.
3. 1/3 cup of butter.
4. Ground black pepper.
5. Finely grated parmesan cheese.
Method.
Finally chop the garlic and combine with the butter. Spread the butter on the bread slices and top with freshly grated black pepper. Cover the buttered surface of the bread with
the grated parmesan cheese and place in oven at 180°C for about 10-15 min.
