Cauliflower BreadFresh from the veggie garden this vegetable is packed full of valuable nutrients. 
Serve Cheesy Cauliflower Bread as an appetizer or try it with our Baked Pumpkin Soup recipe.  Yum!
Ingredients.
 – 1 medium head cauliflower – riced.
 – 1 cup shredded mozzarella cheese.
 – 1/2 cup shaved parmesan cheese.
 – 1 large egg.
 – 2 cloves of fresh garlic finely chopped.
 – 2 tablespoon freshly chopped basil.
 – 2 tablespoon freshly chopped parsley.
 – 2 tablespoon freshly chopped chives.
 – Seasoning.


Method.

 1. Preheat oven to 220°C and line a large baking tray with baking paper.

 
 2. Rice the cauliflower by taking off the florets, rinse and place into a food processor and pulse until it
     is the texture of rice.
 
3.  In a large bowl, mix the riced cauliflower, mozzarella cheese, parmesan cheese, egg, garlic, herbs and
     then season to your liking.  Combine until it holds together. Depending on the size of your cauliflower
     head you may need to add another egg.

 4. Place the mixture onto the lined baking tray and spread covering the full area.

 5. Bake in a preheated oven for 15-20 minutes until the cheese is melted and starting to brown.

 6. Cool for about 5-10 minutes and then cut into sections. Serve with your favorite dipping sauce or soup.
