This spiced sweet potato salad recipe is fresh & delicious!
Served with your favourite meat or just on its own, you are going to love it!
To add some extra colour consider using the different varieties of sweet potatoes.
Try growing some sweet potato at home!
Ingredients.
1.5kg sweet potato peeled and cut into 3cm pieces
1 tsp ground coriander
1 tsp ground cumin
½ tsp ground cinnamon
2 tblspns olive oil
Salt & pepper to taste
100grms baby spinach leaves
3 tblspns pine nuts
Dressing.
¾ cup greek yogurt
2 tblspns water
1 tblspns lemon juice
1 small clove garlic, crushed
2 tblspns chopped fresh mint
Method.
1. Combine potatoes, spices and oil in large bowl. Season with salt & pepper. Place a single layer in an extra large roasting pan, lined with baking paper.
2. Cook in a hot oven (200°C) for about 40 minutes (adjust for your oven), turning once during cooking, until golden and tender. Cool in pan.
3. Meanwhile make the dressing. Combine all the dressing ingredients in a jug. Season to taste.
4. Toast the pine nuts in a dry frying pan on low. Be very careful not to burn them!
5. Arrange the spinach on a large platter. Top with potatoes. Drizzle with dressing. Garnish with pine nuts and mint.
**You could also include roasted beetroot and crumbed feta to make this spiced sweet potato salad even better.
