Lemon Myrtle RecipeThis recipe – Lemon Scented Myrtle Biscuits will be a hit, seeing just the crumbs left in the cookie jar.  When you are lucky enough to have access to bush tucker, then go nuts with the ingredient and incorporate into as many recipes as possible.  Having anti-microbial along with many other beneficial properties, Lemon Scented Myrtle (Backhousia citriodora) has great health benefits for you and your family.  Steep the leaves in tea, flavour fish & chicken or incorporate into your next dessert, this versatile Native Species ingredient has many uses.

Ingredients

250gm – Caster Sugar

250gm – Butter

500gm – sifted Self Raising Flour

4 – Eggs

1 tbsp – Lemon Myrtle powder – How to harvest & prepare

 

Method:

1. Cream together sugar and butter adding the eggs one at a time, fold in flour and lemon myrtle until combined.

2. Roll dough into small balls and place onto a baking tray.

3. Flour fork and press slightly into balls of dough.

4. Bake in oven at 180°C. (Fan force) for 12 to 15 minutes or until golden brown.

5. Cool and store in an airtight container, if they make it that far.
