Recipe - Green Bean, Feta & Red Onion SaladLooking for an easy, yummy option for a week night dinner?  Make the most of your Green Beans with this quick & easy Recipe – Green Bean, Feta & Red Onion salad.  Served with Lamb or Chicken & baked Chat Potatoes everyone’s mouth will be watering.

If you’re not growing Beans then consider planting some to ensure good supply over the coming months.  If not then they are readily available from your grocer.

This Recipe – Green Bean, Feta & Red Onion Salad has made it to the Christmas table too, but I recently whipped this up after a busy day in the office and served it with marinated Lamb Steaks and Celeriac Chips.  It was so quick and tasty!  Dinner was done in no time which is always nice after a busy week.

Ingredients:

400 grams of Green Beans

1 x medium Red Onion – cut into wedges

2 cloves of Garlic – finely chopped

1/3 cup of Feta – crumbled

40 grams of Pine Nuts – toasted

1/2 fresh Lemon

Salt & Pepper to your liking (add a little chilli too if you like)

2 Tbls of Butter

1 Tbls of Olive Oil

 

Method:

1. Top and tail the Green Beans and cut into bit sized sections.

2. On a low-med heat toast the pine nuts in a dry fry pan. Turn them regularly & be very careful as they will quickly burn due to the oils they contain.

3. Heat the Butter & Olive Oil in a large saucepan at a medium heat.

4. Saute the Beans for a couple of minutes and then add the garlic and onion.

5. Squeeze the Lemon juice over the bean mixture and then saute until the Beans are al dente.

6. Transfer the bean mixture to a serving bowl and allow to cool to desired temperature.

7. Before serving, add the crumbled Feta, Pine Nuts & dress with a little more Olive Oil if desired.
