This winter recipe is so easy and makes a tasty side dish.  You could serve it as a vegetarian option with a side
salad. Make great use of the second grade broccoli and cauliflower heads from your garden that are still fine to eat
but look less then presentable steamed on a plate. We hope you enjoy!

2 cups of broccoli & cauliflower florets

4 eggs

1 cup milk

1 packet of instant soup – Thick Vegetable Soup                         

1/3 cup grated tasty cheese

Place rinsed broccoli & cauliflower florets in a greased quiche dish. Beat eggs, milk and soup mix and pour over the
vegetables. Sprinkle the cheese over the top.
Bake at 180C° for 40min or until centre of bake is set.

Serve with slow roasted lamb and baked root vegetables.
